With the growing intensification and the keeping of game animals on smaller areas there are certain parasites and diseases normally only associated with domestic livestock that are rapidly spreading to Game animals. Therefore, it is very important to be able to evaluate game meat quality and safety to ensure that you only supply wholesome venison to your family

Course content
Introduction to meat microbiology.,- general abattoir construction, – personnel hygiene,-sanitation, -pest control,-handling of condemned materials/abattoir waste & quality control.
Specific game abattoir layout,- slaughter processes,- anatomy, -pathology,- diseases of game with reference to game meat,- meat inspection techniques and regulations pertaining to meat safety/game harvesting.
Pre- requisite: Minimum of Grade 10 education
Cost: R7500 (12-20 candidates) (R3500 for the shortened course) (accommodation & meals excluded.)
Duration: Theory sessions of 2-3 days
Practical: Die practical is divided into two sessions (Day 3)
At least one practical that includes: –
with the students.
(The shortened course will only be for two days, equivalent to the first three days days)
Certificate: “Skills for Africa” certificate as the accredited training service provider
